Lucian Carrillo, an environmentalist and professional chef, saw the many invasive species across the states wreaking havoc to crops, land, and, most importantly, our native species and ecosystems.
Growing up in Louisiana, Carrillo understood better than most the destructive effect that these invasive species can bring. Combining his environmental concern and invasive knowledge with his culinary expertise, Lucian took to the road to visit different invasive hotspot areas and bring them a tailored menu for his pop-up restaurant: Enva! 
Whether it’s Florida, California, Maryland, or beyond, Chef Carrillo takes the most invasive, but delicious, species plaguing the area and creates dishes that aim to raise awareness and spread joy through his food.
